WW Coconut Cloud Cake

Ingredients:

  • 1 box (about 15.25 oz) sugar-free angel food cake mix
  • 1 can (about 14 oz) light coconut milk (unsweetened)
  • 1 cup shredded unsweetened coconut (divided)
  • 1/2 cup fat-free whipped topping
  • 1 tablespoon coconut extract (optional, for extra coconut flavor)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon powdered sugar (optional, for garnish)
  • Fresh berries (optional, for serving)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish or angel food cake pan.
  2. Prepare the cake: In a large mixing bowl, combine the sugar-free angel food cake mix and the light coconut milk. Stir until well mixed. The coconut milk will add a creamy, coconut flavor to the angel food cake base.
  3. Add coconut: Stir in about 1/2 cup of the shredded unsweetened coconut (reserving the rest for topping) into the cake batter to infuse more coconut flavor.
  4. Bake the cake: Pour the batter into the prepared baking dish or pan and bake for about 25-30 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  5. Cool the cake: Let the cake cool in the pan for at least 10 minutes. Then, transfer it to a wire rack to cool completely.
  6. Prepare the topping: In a separate bowl, fold together the fat-free whipped topping, the remaining shredded coconut (1/2 cup), coconut extract, and vanilla extract. Mix until well combined.
