🧾 Ingredients (Makes 4 flatbreads)

1 cup fat-free cottage cheese

1 cup self-rising flour
(or substitute below)

Optional:

½ tsp garlic powder

½ tsp Italian seasoning

Pinch of salt

Self-Rising Flour Substitute

If you don’t have self-rising flour:

1 cup all-purpose flour

1½ tsp baking powder

¼ tsp salt

👩‍🍳 Instructions

Blend the cottage cheese

Add cottage cheese to a blender or food processor.

Blend until completely smooth (important for texture).

Make the dough

In a bowl, combine blended cottage cheese and flour.

Add seasonings if using.

Stir until a shaggy dough forms.

Knead lightly

Turn dough onto a floured surface.

Knead 1–2 minutes until smooth (don’t overwork).

Divide & roll

Divide dough into 4 equal pieces.

Roll each into a thin circle or oval.

Cook

Heat a nonstick skillet over medium heat.

Cook each flatbread 1–2 minutes per side until golden spots appear.

Serve or store

Use immediately or cool and store.
