Ingredients:

2 medium skinless, boneless chicken breasts, chopped

1 cup red bell pepper, chopped

½ onion, chopped
-
1 zucchini, chopped
-
1 cup broccoli florets
-
½ cup plum tomatoes, chopped
-
2 tbsp olive oil
-
½ tsp salt
-
½ tsp black pepper
-
1 tsp Italian seasoning
-
¼ tsp paprika
Instructions:

Preheat oven to 500°F (260°C).

Spray a medium roasting pan with nonstick baking spray.

In a small bowl, mix olive oil, salt, pepper, Italian seasoning, and paprika.

Place chicken and veggies in the roasting pan.

Pour the oil mixture over the chicken and veggies, tossing to coat evenly.

Roast for 15 minutes, or until chicken is cooked through and veggies are charred.

If needed, roast a few more minutes.
