🍌 WW Low-Point Banana Oat Muffins
Makes: 12 muffins
WW Points (per muffin): 1–2 points (depending on plan and ingredients)
📝 Ingredients:
2 large ripe bananas, mashed
1 cup unsweetened applesauce
2 eggs (or egg whites for even lower points)
1½ cups rolled oats (blended into oat flour or left whole)
1 tsp vanilla extract
1½ tsp baking powder
½ tsp baking soda
½ tsp cinnamon (optional)
Pinch of salt
Optional: 1–2 tbsp sugar-free maple syrup or a sweetener like Stevia
🔄 Optional Add-ins (adjust points accordingly):
¼ cup mini chocolate chips (adds points)
Chopped nuts (adds points)
Blueberries (0 points)
🍽️ Instructions:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with cooking spray.
In a large bowl, mix the mashed bananas, applesauce, eggs, and vanilla.
Add oats, baking powder, baking soda, cinnamon, and salt. Stir until combined.
Fold in any optional add-ins if using.
Spoon the batter evenly into 12 muffin cups.
Bake for 18–22 minutes or until a toothpick inserted comes out clean.
