A lighter holiday classic made with steamed cauliflower, garlic, and fat-free Greek yogurt. Creamy, fluffy, and a perfect substitute for mashed potatoes without the extra points.

🧂 Ingredients (Serves 4)

  • 1 large head cauliflower, cut into florets

  • 2 cloves garlic, peeled

  • ¼ cup fat-free Greek yogurt

  • Salt & black pepper, to taste

Optional (adds 1 point total if used):

  • 1 tsp olive oil or light butter

  • Fresh chives or parsley


🔪 Instructions

1️⃣ Cook the Cauliflower

  • Steam or boil cauliflower and garlic until very tender (10–12 minutes).

  • Drain extremely well (important for creamy texture).

2️⃣ Mash or Blend

  • Transfer to a food processor or bowl.

  • Add Greek yogurt, salt, and pepper.

  • Blend or mash until smooth and fluffy.

3️⃣ Taste & Finish

  • Adjust seasoning.

  • Stir in olive oil or butter if using.
