  • 1 medium zucchini, grated & squeezed dry

 Instructions

  1. Preheat oven to 180°C / 350°F. Lightly grease an 8×8-inch (20×20 cm) baking dish.
  2. Heat olive oil in a pan; sauté onion 2–3 minutes until soft. Let cool slightly.
  3. In a bowl, whisk eggs, milk, salt, pepper, and paprika.
  4. Fold in zucchini, corn, sautéed onion, cheese, and herbs.
  5. Pour mixture into the dish and spread evenly.
  6. Bake 30–35 minutes until set in the center and lightly golden.
  7. Rest 5 minutes, slice, and serve.
