1 medium size zucchini
1 cup cooked taco meat
1 cup shredded cheddar cheese
Slice the zucchini into 1/4 inch slices and place on a lined air fryer basket.
Top the zucchini with the cooked taco meat and shredded cheese.
Heat the air fryer to 375 degrees F. Cook the zucchini for 6 minutes. Cook in additional 2 minute increments until the cheese is golden and the zucchini is tender.
Preheat the oven to 375 degrees F. Follow the directions above to prepare the nachos. Bake for 10 minutes, check to see when the zucchini is fork tender. Bake additional 2 minute increments until the zucchini has reached your desired tenderness
