Instructions

Cook meat
In a large skillet or pot, heat olive oil. Add onion and cook until soft. Add garlic and ground meat; cook until browned. Drain excess fat. -
Add vegetables & seasoning
Stir in chopped bell peppers, diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. -
Simmer
Cover and simmer on medium-low heat for 10–15 minutes until peppers are tender. -
Add rice
Stir in cooked rice and mix well. -
Bake
Transfer mixture to a greased baking dish. Top with cheese.
Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden. -
