Ingredients

2 lbs (900 g) baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano or Italian seasoning

½ teaspoon paprika

Salt & black pepper to taste

1½ cups shredded mozzarella or cheddar cheese

¼ cup grated Parmesan cheese

Fresh parsley, chopped (optional)
Instructions

Preheat oven
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. -
Season potatoes
In a bowl, toss potatoes with olive oil, garlic, oregano, paprika, salt, and pepper until well coated. -
Roast
Spread potatoes in a single layer on the sheet pan. Roast for 30–35 minutes, flipping halfway, until golden and crispy. -
Add cheese
Remove from oven, sprinkle mozzarella and Parmesan evenly over potatoes. -
Melt & serve
Return to oven for 5–7 minutes until cheese is melted and bubbly. Garnish with parsley and serve hot.
