What You’ll Need
2 large potatoes, peeled and diced
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
¼ cup chopped fresh parsley
4 tablespoons butter
2 cloves garlic, minced
Salt and pepper, to taste
How to Make It
1. Bring a pot of salted water to a boil. Add the diced potatoes and cook for 10–12 minutes, until very tender. Drain well and let cool slightly.
2. Transfer the potatoes to a large bowl and mash until smooth. Season with salt and pepper.
3. Stir in the cheddar cheese, Parmesan cheese, and chopped parsley until evenly combined.
4. Scoop small portions of the mixture and roll into bite-sized balls.
5. In a small saucepan, melt the butter over low heat. Add the minced garlic and cook for 1–2 minutes, just until fragrant.
6. Place the potato balls on a parchment-lined baking sheet. Brush generously with the garlic butter.
7. Bake in a 400°F oven for 20–25 minutes, until golden and crisp on the outside.
8. Serve warm, with extra garlic butter or your favorite dipping sauce if desired.
