Ingredients

Chicken

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt & black pepper to taste

Salad

  • 4 cups mixed greens (romaine, spinach, arugula)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • ¼ red onion, thinly sliced

  • ¼ cup shredded carrots

  • ¼ cup feta or shredded cheese (optional)

Dressing

  • 3 tablespoons olive oil

  • 1 tablespoon lemon juice or vinegar

  • 1 teaspoon Dijon mustard

  • Salt & pepper to taste


Instructions

  1. Season chicken with olive oil, garlic powder, paprika, salt, and pepper.

  2. Grill chicken over medium heat for 5–6 minutes per side until fully cooked; rest and slice.

  3. Arrange greens, tomatoes, cucumber, onion, and carrots in a bowl.

  4. Top salad with sliced grilled chicken.

  5. Whisk dressing ingredients and drizzle over salad.

  6. Toss gently and serve immediately.
