Spinach & Cheese Baked Medallions”
Ingredients:
– 2 cups fresh spinach, chopped.
– 1 cup ricotta cheese.
– ½ cup feta, crumbled.
– 2 large eggs.
– ¼ cup almond flour.
– 2 tbsp extra‑virgin olive oil.
– ½ tsp garlic powder.
– ¼ tsp black pepper.
– ¼ tsp sea salt.
– ½ tsp dried oregano.
Method:
1. Preheat oven to 190 °C (375 °F).
2. Sauté spinach in 1 tbsp olive oil until wilted; cool & chop.
3. Mix ricotta, feta, eggs, almond flour, garlic powder, salt, pepper, oregano.
4. Fold in spinach.
5. Grease moulds with 1 tbsp olive oil.
6. Spoon mix into moulds, ¾ full.
7. Bake 18‑20 min until golden.
8. Cool & serve.
