Baked Fish

Ingredients
4 white fish fillets (cod, haddock, sea bass, or tilapia)
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Salt and black pepper to taste
1 lemon (zest + juice)
1 cup cherry tomatoes, halved
1/3 cup red onion, thinly sliced
1/4 cup Kalamata olives, sliced
2 tablespoons capers (optional)
2 tablespoons fresh parsley, chopped
Lemon slices for garnish
Instructions
Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
Pat the fish fillets dry and place them in the baking dish.
In a small bowl, mix olive oil, garlic, oregano, thyme, paprika, lemon zest, lemon juice, salt, and pepper.
Spoon the mixture evenly over the fish.
Scatter cherry tomatoes, red onion, olives, and capers around and on top of the fish.
Bake for 18–22 minutes, or until the fish flakes easily with a fork. Cooking time will vary depending on thickness.
Remove from oven and sprinkle with fresh parsley. Garnish with lemon slices before serving.
