Instructions

  1. Prepare the Beans

Drain and rinse the cannellini beans thoroughly under cool running water.

Set them aside.

  1. Sauté the Onion

Heat olive oil in a large skillet over medium heat.

  1. Add Garlic & Tomatoes

  1. Season

Add oregano, smoked paprika, red pepper flakes, salt, and black pepper.

  1. Add the White Beans

Add the cannellini beans and vegetable broth.

Stir gently and bring the mixture to a low simmer.

Cook for 5–7 minutes, allowing the beans to absorb the garlic and herb flavors.

  1. Add the Spinach

Add the spinach a handful at a time, stirring gently as it wilts.

Cook for approximately 2–3 minutes, until all the spinach is tender.

  1. Make It Creamy

For a naturally creamy texture, gently mash about ¼–⅓ of the beans against the side of the skillet with the back of a spoon.

Stir everything together.

The mashed beans will thicken the broth without needing flour or a heavy cream sauce.

  1. Finish with Lemon

Turn off the heat.

Add fresh lemon juice and chopped parsley.

Taste and adjust the salt, pepper, or lemon juice as desired.
