Zucchini Sticks
Ingredients:
2 medium-sized zucchinis, cut into sticks
1 cup almond flour
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
Salt and pepper to taste
2 large eggs, beaten
Cooking spray (preferably olive oil spray)
Instructions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a shallow bowl, mix almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Dip each zucchini stick into the beaten eggs, ensuring it’s coated evenly.
Roll the egg-coated zucchini stick in the almond flour mixture, pressing the coating gently to adhere.
Place the coated zucchini sticks on the prepared baking sheet, leaving space between each piece.
Lightly spray the zucchini sticks with cooking spray to promote browning.
Bake in the preheated oven for 15-20 minutes or until the coating is golden and crisp.
Remove from the oven and let them cool for a few minutes before serving
