Butternut Squash, Sweet Potato & Carrot Bake
A warm, cheesy, and comforting vegetable bake filled with roasted butternut squash, sweet potatoes, carrots, herbs, and creamy melted cheese. Perfect for family dinners, holidays, or meal prep.
Ingredients
Vegetables
- 1 medium butternut squash, peeled and cubed
- 2 medium sweet potatoes, peeled and thinly sliced
- 3 large carrots, peeled and sliced
- 1 small onion, thinly sliced
- 3 garlic cloves, minced
Seasoning
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme
- ½ tsp rosemary
- ¼ tsp nutmeg (optional)
Cream Mixture
- 1 cup heavy cream or half-and-half
- ½ cup vegetable broth
Cheese
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ¼ cup grated parmesan cheese
Optional Toppings
- Chopped walnuts or pecans
- Fresh parsley or thyme
Instructions
1. Prepare the Oven
- Preheat oven to 400°F (200°C).
- Grease a large baking dish with butter or oil.
2. Season the Vegetables
- In a large bowl combine:
- butternut squash
- sweet potatoes
- carrots
- onion
- garlic
- Add olive oil, salt, pepper, paprika, thyme, rosemary, and nutmeg.
- Toss well until vegetables are evenly coated.
3. Assemble the Bake
- Spread half the vegetables into the baking dish.
- Pour half of the cream and broth mixture over the vegetables.
- Sprinkle with half the mozzarella and cheddar cheese.
- Add remaining vegetables and pour over the rest of the cream mixture.
- Top with remaining mozzarella, cheddar, and parmesan.
4. Bake
- Cover with foil and bake for 35 minutes.
- Remove foil and bake another 20–25 minutes until vegetables are tender and the top is golden and bubbly.
5. Garnish & Serve
- Let rest for 5–10 minutes before serving.
- Garnish with fresh herbs and chopped nuts if desired.
