Caramelized Butternut Squash with Cranberry-Balsamic Glaze

Ingredients
For the Squash
- 1 large butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tbsp maple syrup or honey
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cinnamon
- ¼ tsp smoked paprika
For the Cranberry-Balsamic Glaze
- 1 cup fresh or frozen cranberries
- ¼ cup balsamic vinegar
- 3 tbsp maple syrup or brown sugar
- ¼ cup orange juice
- 1 tsp orange zest
- 1 small garlic clove, minced
- Pinch of salt
Optional Garnish
- Crumbled feta or goat cheese
- Chopped pecans or walnuts
- Fresh thyme or parsley
Instructions
1. Roast the Butternut Squash
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In a large bowl, toss squash with:
- olive oil
- maple syrup
- salt
- pepper
- cinnamon
- smoked paprika
- Spread in a single layer on the baking sheet.
- Roast for 30–35 minutes, flipping halfway through, until caramelized and tender.
2. Make the Cranberry-Balsamic Glaze
- In a small saucepan over medium heat, combine:
- cranberries
- balsamic vinegar
- maple syrup
- orange juice
- orange zest
- garlic
- pinch of salt
- Simmer for 10–12 minutes, stirring occasionally, until cranberries burst and sauce thickens.
3. Assemble
- Transfer roasted squash to a serving dish.
- Spoon cranberry-balsamic glaze over the top.
- Garnish with feta, nuts, and fresh herbs if desired.
