Cheesy Meatball Potato Bake

Cheesy Meatball Potato Bake

Ingredients

500g lean ground meat (turkey or extra-lean beef)

1 egg

2 tbsp breadcrumbs (or oat fiber / almond flour for lower carbs)

Garlic powder, paprika, salt, pepper

600g potatoes, thinly sliced (or swap half with zucchini for fewer carbs)

1 small onion, finely chopped

2 cloves garlic, minced

1 can chopped tomatoes (no added sugar)

1 tsp Italian herbs

80–100g reduced-fat shredded cheese

Optional: light mozzarella or Parmesan cheese for extra flavor

Instructions

Make the meatballs

Mix ground meat, egg, breadcrumbs, and spices. Form small meatballs.

Brown them lightly

Sear in a nonstick pan (no or minimal oil) until just browned—don’t cook fully.

Prepare the sauce

In the same pan, sauté onion + garlic, add tomatoes + herbs, simmer 5–10 min.

Layer it up

In a baking dish:

Layer potatoes (or potato + zucchini mix)

Add meatballs

Pour sauce

Repeat layers

Top with cheese

Sprinkle reduced-fat cheese evenly.

Bake

180°C (350°F) for ~40–45 minutes until potatoes are tender and top is golden.

WW-Friendly Tips

Use extra-lean meat (5% fat or less) → lowers points

Swap some potatoes with zucchini or eggplant

Go for reduced-fat cheese (big point saver!)

Keep portions balanced: pair with a big salad
