Serves: 4
Prep: 15 minutes
Cook: 30–35 minutes
Total: about 50 minutes
Difficulty: Easy–moderate

Ingredients
Chicken
4 boneless, skinless chicken breasts — about 170–200 g each

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp Italian seasoning

1 tbsp olive oil

4–6 strips bacon, chopped

Vegetables
225 g mushrooms, sliced

3–4 cups fresh baby spinach

4 cloves garlic, minced

½ small onion, finely chopped — optional

Cream sauce
1 cup heavy/whipping cream

½ cup chicken broth

½ cup grated Parmesan

½ cup shredded mozzarella

1 tbsp butter

½ tsp Italian seasoning

¼ tsp black pepper

Salt, to taste

¼ tsp red-pepper flakes — optional

Method
Prepare the chicken.
Pat the chicken dry. If the breasts are very thick, gently pound them to an even thickness. Season both sides with salt, pepper, paprika, and Italian seasoning.

Cook the bacon.
Heat a large oven-safe skillet over medium heat. Cook the chopped bacon until browned and crisp. Remove it and leave about 1–2 tbsp of bacon fat in the pan.

Sear the chicken.
Add olive oil if needed. Sear the chicken for about 3–4 minutes per side, until nicely browned. It doesn’t need to be completely cooked yet. Remove to a plate.

Cook the mushrooms.
Add the butter and sliced mushrooms. Cook for 5–7 minutes, stirring occasionally, until browned and their moisture has evaporated.

Add aromatics and spinach.
Add onion, if using, and cook for 2 minutes. Add garlic and cook for about 30 seconds. Add spinach and cook just until wilted.

Make the sauce.
Pour in the chicken broth and scrape the browned bits from the bottom. Add cream, Parmesan, Italian seasoning, black pepper, and red-pepper flakes. Simmer gently for 2–3 minutes. Don’t boil aggressively or the cream may separate.

Assemble.
Return the chicken to the skillet and spoon the mushroom-spinach sauce over it. Sprinkle mozzarella over the chicken and distribute the cooked bacon on top.

Bake.
Transfer the skillet to a preheated 190°C / 375°F oven. Bake for approximately 15–20 minutes, depending on the thickness of the chicken.

Check doneness.
The thickest part of the chicken should reach 74°C / 165°F. If desired, broil for 1–2 minutes at the end to brown the cheese and bacon.

Rest and serve.
Let the chicken rest for 5 minutes before serving. Spoon plenty of the creamy mushroom-spinach sauce over each portion.

Nut & allergen information
Nuts: This recipe contains no tree nuts or peanuts as written.

However, if you’re cooking for someone with a serious nut allergy:

Check the labels on Parmesan, mozzarella, bacon, broth, cream, and seasonings.

Avoid products manufactured in facilities with the relevant allergen if cross-contact is a concern.

Don’t add pesto unless you’ve confirmed it is nut-free; many pestos contain pine nuts or other nuts.

Butter and dairy products are not nuts, but this recipe does contain milk/dairy.

Parmesan and chicken broth can contain other ingredients depending on the brand.

Other major allergens: milk/dairy.
Gluten: The recipe can be naturally gluten-free, but check packaged bacon, broth, seasonings, and other processed ingredients for cross-contact or added gluten.

Recipe Q&A
Q: Can I use chicken thighs?
Yes. Boneless, skinless thighs work particularly well and are more forgiving than breast meat. Cook until they reach 74°C/165°F internally.

Q: Can I make this without bacon?
Absolutely. Omit it and use olive oil or butter for sautéing. You can add smoked paprika for some of the lost smoky flavor.

Q: What mushrooms work best?
Cremini/baby bella mushrooms are excellent. White button, portobello, or a mixed mushroom selection also works.

Q: Can I use frozen spinach?
Yes. Thaw it completely and squeeze out excess water before adding it, otherwise the sauce can become watery.

Q: Can I substitute the heavy cream?
Half-and-half can work, although the sauce will be thinner. For a lighter version, use evaporated milk. Avoid boiling lower-fat dairy aggressively.

Q: What cheese can replace Parmesan?
Pecorino Romano is a good substitute. For the mozzarella, provolone or a mild Italian cheese works well.

Q: Can I prepare it ahead of time?
Yes. Assemble it, refrigerate it covered, and bake when ready. Because the chicken starts cold, allow additional cooking time and verify the center reaches 74°C/165°F.

Q: Can I freeze it?
You can, but creamy sauces can separate somewhat after freezing and thawing. For best texture, freeze the cooked chicken and sauce separately when practical.

Q: What should I serve with it?
For a low-carb meal, serve with roasted broccoli, asparagus, cauliflower mash, or a green salad. For a heartier meal, serve with pasta, rice, mashed potatoes, or crusty bread.

Q: How do I make the sauce thicker?
Simmer it a little longer before returning the chicken, or increase the Parmesan slightly. Avoid adding a large amount of flour because it changes the character of the sauce.

Q: Why is my sauce watery?
Mushrooms and spinach release a lot of water. Brown the mushrooms thoroughly, squeeze frozen spinach dry, and let the sauce simmer uncovered for a few minutes.

Q: How do I prevent dry chicken?
Don’t overcook it. Searing first and finishing in the sauce helps, but the most reliable method is using an instant-read thermometer and removing it once the thickest portion reaches 74°C/165°F.

Q: Is this keto-friendly?
As written, it is relatively low in carbohydrates, but the exact carbohydrate count depends on the products used. Serve it with non-starchy vegetables rather than pasta, rice, or potatoes.

Q: Can I make it dairy-free?
Yes, but you’ll need dairy-free cream and cheese alternatives. The flavor and texture will differ from the pictured version.

Q: Can I make it nut-free?
Yes—the recipe itself is nut-free. For a person with a severe allergy, use verified allergen-safe ingredients and prevent cross-contact during preparation.
