Double Chocolate Pancakes

These Double Chocolate Pancakes are soft, fluffy and so decadent. In addition to cocoa powder and chocolate chips in the batter, these pancakes are drizzled with a chocolate ganache for another dose of chocolate. They make perfect weekend breakfast for true chocolate lovers!

Although pancakes are normally considered as a breakfast or brunch food, because of the chocolate sauce on the top, I love these chocolate pancakes for dessert. Who can judge you if you even spread the sauce between the layers? It is your chocolate pancake recipe and you can use as much chocolate as you like. It’s not something you do everyday and weekends are for spoiling ourselves. Right?

Also known as Birthday Cake for breakfast. Chocolate on chocolate makes for the best breakfast on earth. And brownies!

The perfect way to spoil the chocolate lover in your life, these pancakes are undeniably decadent. My daughter and her friends used to beg for chocolate chip pancakes after sleepovers, and if you’re going to cave, you might as well go all out! Big flakes of sea salt add a nice crunch of saltiness to the caramel and temper the dish’s sweetness.

Recipe:

INGREDIENTS:

Makes 12(2-3 Tbsp per pancake of batter)
1 Pancake: 105 Calories, 7g Fat, 2.8g Carbs,5.8g protein
1 Cup Almond flour
1/4 Cup Coconut flour
2 Tbsp Swerve
1 tsp baking powder
6 large Eggs
6 Tbsp Unsweetened almond milk
2 tsp Vanilla extract
1 pinch Salt
2 Tbsp Cocoa Powder
1/3 Cup Lily’s Chocolate Chips
INSTRUCTIONS:

1. Whisk all ingredients together in a bowl until smooth. (Batter should be the consistency of typical pancake batter. If it’s too thick, add a little more milk.)
2. Preheat a buttered pan on the stove over medium-low to medium heat. Drop the batter onto the hot pan and form into circles. Cover and cook about 1.5-2 minutes, until bubbles start to form. Flip and cook another 1.5-2 minutes, until browned on the other side. Repeat with the rest of the batter. Drizzle with sugarfree chocolate syrup(I used ChocZero) and cream cheese!
