1 pound cooked, seasoned taco meat
12 slices cheddar cheese
1 (15 ounce) can low carb enchilada sauce or homemade recipe (linked below)
Preheat an oven to 350 degrees F.
Bake cheddar cheese slices on a silicone baking mat for 5-7 minutes until they have browned around the edges. Allow the cheese to cool slightly so you can easily handle it.
Add the prepared, seasoned taco meat to each cheese shell and roll tightly, seam side down.
Top with warm enchilada sauce.
