Everything Bagel Cloud Bread Recipe

This Everything Bagel Cloud Bread is like an everything bagel but without the calories or WW points. It’s a light and fluffy, quick and easy to make Weight Watchers bread. It also makes a great side to soup, salad or eaten straight up on its own!

Ingredients

  • ▢3 eggs separated
  • ▢⅓ cup non fat-Greek yogurt
  • ▢½ teaspoon baking powder
  • ▢⅛ teaspoon cream of tartar
  • ▢1.5 tablespoon Everything Bagel seasoning

Instructions

  • Place oven rack in middle of oven. Preheat oven to 300°F/148 degrees C. Cover a baking sheet pan with parchment paper; lightly coat with cooking spray.
  • Separate egg yolks from whites; place each in separate mixing bowls.
  • Whisk Greek yogurt into bowl with yolks until smooth.greek yogurt mixed with egg yolks
  • Add baking powder and cream of tartar to bowl with whites; beat on high speed with an electric mixer until fluffy and medium peaks form. * You want the peaks stiff enough that they stand and flop a little at the tip (see NOTES)egg whites beaten to medium peaks
  • Slowly and gently fold egg yolk mixture into egg white mixture.
  • Spoon mixture into 6 even mounds onto prepared baking sheet. Sprinkle seasoning on top, dividing evenly between all mounds.cloud bread in mounds
  • Bake until lightly browned, 20-35 minutes (I found 23 minutes was perfect!) But when I’ve made them larger, I’ve needed to cook them longer. They shouldn’t be wet when you pull them apart.
  • Cool 5 minutes.
  • *If you freeze them, you can pop them into the toaster once they are defrosted to crisp them up!

Ingredients:

  • 1.5 tablespoons Everything Bagel seasoning

  2. Separate Eggs: Carefully separate the egg yolks from the whites, placing each in separate mixing bowls.
  3. Mix Egg Yolks: In the bowl with the egg yolks, whisk in the non-fat Greek yogurt until the mixture is smooth.
  4. Prepare Egg Whites: To the bowl containing the egg whites, add the baking powder and cream of tartar. Using an electric mixer on high speed, beat the egg whites until they form fluffy and medium peaks. You want the peaks to be stiff enough that they stand and flop slightly at the tip.
  5. Combine Mixtures: Slowly and gently fold the egg yolk mixture into the egg white mixture until fully combined.
  6. Shape Cloud Bread: Spoon the mixture into 6 even mounds onto the prepared baking sheet. Sprinkle the Everything Bagel seasoning on top, dividing it evenly between all mounds.
  7. Bake: Place the baking sheet in the preheated oven and bake until the cloud bread is lightly browned, approximately 20-35 minutes. The optimal baking time may vary, so check after 20 minutes. The cloud bread shouldn’t be wet when you pull them apart.
  8. Cool: Allow the cloud bread to cool for 5 minutes before serving. If freezing, you can toast them once they are defrosted to crisp them up.
