Weight Watchers Meatball Subs (Per Serving):
Ingredients:
For the Meatballs:
- 1 pound lean ground turkey or chicken
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 cloves garlic, minced
- Salt and pepper to taste
For the Marinara Sauce:
- 1 can (14 oz) crushed tomatoes
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Additional Ingredients:
- Whole wheat sub rolls or baguettes
- Reduced-fat mozzarella cheese, shredded
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground turkey or chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for about 15-20 minutes or until cooked through and browned on the outside.
- While the meatballs are baking, prepare the marinara sauce. In a saucepan, combine the crushed tomatoes, minced garlic, oregano, basil, salt, and pepper. Simmer over low heat for about 10-15 minutes, stirring occasionally.
- Once the meatballs are done, transfer them to the marinara sauce and let them simmer in the sauce for an additional 5-10 minutes.
- Slice the whole wheat sub rolls or baguettes and place a few meatballs with sauce in each roll.
- Sprinkle each sub with reduced-fat mozzarella cheese.
- Place the subs back in the oven and broil for 2-3 minutes or until the cheese is melted and bubbly.
- Garnish with fresh basil leaves if desired.
