Weight Watchers Meatball Subs (Per Serving):


For the Meatballs:

  • 1 pound lean ground turkey or chicken
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste

For the Marinara Sauce:

  • 1 can (14 oz) crushed tomatoes
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Additional Ingredients:

  • Whole wheat sub rolls or baguettes
  • Reduced-fat mozzarella cheese, shredded
  • Fresh basil leaves, for garnish (optional)


  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground turkey or chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix until well combined.
  3. Shape the mixture into meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for about 15-20 minutes or until cooked through and browned on the outside.
  5. While the meatballs are baking, prepare the marinara sauce. In a saucepan, combine the crushed tomatoes, minced garlic, oregano, basil, salt, and pepper. Simmer over low heat for about 10-15 minutes, stirring occasionally.
  6. Once the meatballs are done, transfer them to the marinara sauce and let them simmer in the sauce for an additional 5-10 minutes.
  7. Slice the whole wheat sub rolls or baguettes and place a few meatballs with sauce in each roll.
  8. Sprinkle each sub with reduced-fat mozzarella cheese.
  9. Place the subs back in the oven and broil for 2-3 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh basil leaves if desired.
  11. Serve your Weight Watchers-friendly Meatball Subs hot and enjoy!
