You will need:
1 Small zucchini (I chose a smaller size as they tend to have less moisture)
1 egg
1/2 cup grated Parmesan Romano cheese
Garlic powder
Italian seasoning
Cut zucchini in strips and dry with paper towels. Coat in scrambled egg wash, let excess drip off and coat in mixture of cheese and spices. Transfer to a baking sheet ( don’t forget to spray for non stick!). Bake at 400 for 20 minutes or to desired crispness ( I also turned on the broiler (low) for a few minutes to make them extra crispy!
