Instructions:
1. Start by making the chocolate cups. Melt the sugar-free dark chocolate and coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth.
2. Line a muffin tin with 8 paper or silicone cupcake liners. Spoon about a tablespoon of the melted chocolate into each liner, swirling it around to coat the sides evenly. Place the muffin tin in the refrigerator to let the chocolate set, around 10 minutes.
3. While the chocolate cups are setting, prepare the caramel filling. In a small saucepan over low heat, melt the butter. Add the heavy cream and granulated erythritol, stirring until the sweetener has dissolved.
4. Increase the heat to medium and bring the mixture to a gentle boil. Let it simmer for about 5-7 minutes, stirring occasionally, until the caramel thickens and turns golden brown.

9. Once the chocolate is firm, remove the cups from the muffin tin and peel off the cupcake liners.
