For the chocolate cups:
– 4 ounces sugar-free dark chocolate
– 1 tablespoon coconut oil

For the caramel filling:
– 1/4 cup heavy cream
– 2 tablespoons butter
– 1/4 cup granulated erythritol (or any keto-friendly sweetener)
– 1/2 teaspoon vanilla extract
– Pinch of salt

1. Start by making the chocolate cups. Melt the sugar-free dark chocolate and coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth.

2. Line a muffin tin with 8 paper or silicone cupcake liners. Spoon about a tablespoon of the melted chocolate into each liner, swirling it around to coat the sides evenly. Place the muffin tin in the refrigerator to let the chocolate set, around 10 minutes.

3. While the chocolate cups are setting, prepare the caramel filling. In a small saucepan over low heat, melt the butter. Add the heavy cream and granulated erythritol, stirring until the sweetener has dissolved.

4. Increase the heat to medium and bring the mixture to a gentle boil. Let it simmer for about 5-7 minutes, stirring occasionally, until the caramel thickens and turns golden brown.

5. Remove the caramel from the heat and stir in the vanilla extract and salt. Allow it to cool for a few minutes.

6. Take the muffin tin out of the refrigerator and spoon about a teaspoon of the caramel into each chocolate cup, making sure not to fill them completely to the top.

7. Spoon the remaining melted chocolate over the caramel, covering it completely. Tap the muffin tin gently on the counter to smooth the chocolate and remove any air bubbles.

8. Return the muffin tin to the refrigerator and let the cups chill for at least 1 hour or until the chocolate is completely set.

9. Once the chocolate is firm, remove the cups from the muffin tin and peel off the cupcake liners.
