Ingredients:

For the crust:
– 1 ½ cups almond flour
– ¼ cup cocoa powder
– ¼ cup powdered erythritol or your preferred keto-friendly sweetener
– ¼ cup melted butter

For the filling:
– 1 cup creamy peanut butter (sugar-free and natural)
– ¼ cup powdered erythritol or your preferred keto-friendly sweetener
– ¼ cup heavy cream
– 1 teaspoon vanilla extract

For the chocolate ganache:
– 3 oz dark chocolate (at least 85% cocoa), chopped
– ¼ cup heavy cream
– 1 tablespoon powdered erythritol or your preferred keto-friendly sweetener

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a medium-sized bowl, combine the almond flour, cocoa powder, and powdered erythritol for the crust. Mix well.

3. Pour in the melted butter and stir until the mixture becomes crumbly and resembles wet sand.

4. Press the crust mixture evenly into the bottom and up the sides of greased tart pans or a greased muffin tin. Make sure to compact it firmly.

5. Bake the crust for 10-12 minutes, or until firm. Remove from the oven and allow it to cool completely.

6. In another bowl, combine the creamy peanut butter, powdered erythritol, heavy cream, and vanilla extract for the filling. Mix until smooth and well combined.

7. Once the crust has cooled, spoon the peanut butter filling into the tart shells, spreading it evenly.

8. In a small saucepan, heat the heavy cream for the chocolate ganache over low heat until it begins to simmer.

9. Place the chopped dark chocolate and powdered erythritol in a heatproof bowl. Pour the heated cream over the chocolate and let it sit for a minute to melt. Stir until smooth and glossy.

10. Spoon the chocolate ganache over the peanut butter filling in each tart, spreading it evenly.

11. Refrigerate the tarts for at least 1 hour to allow them to set.

12. Once set, remove the tarts from the refrigerator and carefully remove them from the tart pans or muffin tin.

13. Serve chilled and enjoy your delicious Keto Chocolate Peanut Butter Tarts!

Note: You can garnish the tarts with crushed peanuts or a drizzle of melted peanut butter if desired.
