Keto French Toast finger food for breakfast!
The kids are going to love this dipped in a little container of sugar free syrup, or with some whipped cream and berries. You’d never know it was Keto, so shhhhhhhhhhh, don’t tell them! 🤫
Keto French Toast Sticks
Makes 2 servings – approx. 5.5 net carbs per serving.
6 T almond flour
1 tsp baking powder
2 eggs
2 T butter – melted
For making the French toast:
2 T butter
2 eggs
2 T unsweetened almond milk
1 tsp vanilla
1 tsp cinnamon
OPTIONAL: 2 T Swerve granulated and 1 tsp cinnamon mixed to roll the sticks in after they are cooked
First make the “bread”. Mix together the almond flour, baking powder, eggs and melted butter. Use a whisk to mix well. Pour into a microwave square container. Microwave for 90 seconds until firm on top and a toothpick comes out clean. Set aside to cool. Once cool, slice into sticks. Remove from container to a cooling rack to cool completely.
Whisk together the eggs, vanilla, cinnamon, and unsweetened almond milk in a shallow dish. Melt the butter in a skillet over medium heat. Dip each “bread” stick in the egg mixture and place in skillet. Cook to golden brown on all sides. Remove to serving plate and sprinkle with powdered Swerve (optional) and top with sugar free syrup or some berries.
If you want a Cinnamon Sugar coating, mix the optional Swerve and cinnamon together in a shallow bowl, and place the French toast in the mixture out of the skillet to coat.
You can make the French toast sticks ahead of time and freeze once completely cooled. Reheat in the microwave or in a 350 oven for 5-10 minutes. You can even try reheating in the air fryer. I would not roll in cinnamon sugar if I am going to freeze.
