INGREDIENTS
For the chicken:
- 1 1/2 pounds chicken thighs (bone in, skin on)
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp dried thyme
- ½ tsp dried rosemary
- salt and black pepper to taste
- 2 tbsp olive oil
The rest of ingredients:
- 1 tbsp butter
- 8 oz mushrooms, sliced..
- 1 red onion, sliced
- 4 garlic cloves, minced.
- 1 tbsp chopped fresh parsley..
- ¼ tsp dried thyme..
- ¼ tsp dried rosemary.
- salt and black pepper to taste
INSTRUCTIONS
- Preheat oven to 350°F..
- .To make the rub for the chicken, in a small bowl combine the onion powder, garlic powder, thyme, rosemary and salt and black pepper to taste..
- Coat all sides of the chicken with the dry rub..
- Heat the olive oil over medium heat in a large oven-safe skillet..
- Add the chicken and cook 4 minutes per side..
- Remove the chicken from the skillet..
- In the same skillet, melt the butter.
- Add the red onion and cook for 2-3 minutes.
- Add the garlic and cook for 30 seconds.
- Add the mushrooms and cook for 4 minutes.
- Return the chicken to the skillet.
- Place the skillet to the oven.
- Bake for 20-25 minutes or until chicken is cooked through.
- Remove from the oven..
- Sprinkle with fresh parsley and serve.
