Ingredients:
– 1 pound ground beef
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups beef broth
– 2 cups diced tomatoes (canned or fresh)
– 2 cups shredded cabbage
– 2 carrots, peeled and sliced
– 2 stalks celery, sliced
– 1 teaspoon dried thyme
– 1 teaspoon paprika
– Salt and pepper to taste
– Fresh parsley for garnish (optional)

Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground beef and cook until browned, breaking it up into smaller pieces with a spoon. Remove the beef from the pot and set it aside.
2. In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
3. Return the cooked ground beef to the pot. Stir in the beef broth, diced tomatoes, shredded cabbage, sliced carrots, sliced celery, dried thyme, and paprika. Season with salt and pepper to taste.
4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes until the vegetables are tender.
5. Taste the soup and adjust the seasoning if needed. If desired, sprinkle fresh parsley on top for garnish.
6. Serve the ground beef and cabbage soup hot and enjoy!
