Ingredients

4 slices cooked bacon
2 tbsp butter
1 tbsp olive oil
1 lb thin cut boneless skinless chicken breasts (I chopped mine up and made it like a casserole)
6 tbsp sugar free BBQ sauce
2/3 cup shredded cheddar
1/4 cup shredded Monterey jack cheese
1/2 tsp garlic powder
1 tsp parsley
1/4 tsp salt and pepper
In a hot, oven-safe skillet, add olive oil and butter.
Season chicken with salt, pepper and garlic powder.
Sear chicken on each side for about 4 min on medium/high, then cover with a lid and reduce heat to low.
Simmer until chicken is cooked thru.
Spoon BBQ sauce on top of each breast.
Divide bacon evenly and place it on top of each breast.
Sprinkle cheddar on top of bacon.
Finish off with Monterey jack then parsley.
Place on top rack and broil on high 2-3 min or until cheese is melted and bubbly.
