Ingredients:

1.5 cups coconut flour

2 eggs beaten

.5 cup Legendary Foods Pecan Pie Almond Butter

16tbsp butter melted

.5 cup monkfruit powdered sweetener

1tsp baking powder

1tbsp unflavored gelatin

Directions:

Combine coconut flour, powdered sweetener, baking powder, and gelatin in a bowl with a whisk.

Heat butter in microwave until just melted. Stir in almond butter until combined. Add to dry mixture and combine.

Add eggs into mixture and combine.

Lay plastic wrap out on counter and place dough in a strip in center. Shape into a tube 12″ long. Roll up in plastic wrap and smooth into a tube and flatten ends.

Chill in fridge for one hour.

Preheat oven to 350 with two racks in center.

Take dough out of fridge and slice into 24 rounds, approximately 1/2″ each. Place onto two sheet pans lined with parchment or silicone baking sheets.

Cook for 7 minutes. Switch and rotate pans and cook for another 7-8 minutes.

Allow to cool thoroughly.
