Ingredients:
– 1 small pumpkin, peeled and diced
– 2 tablespoons vegetable oil
– 1 teaspoon cumin seeds
– 1 onion, finely chopped
– 2 garlic cloves, minced
– 1 teaspoon ginger paste
– 1 green chili, finely chopped
– 1 teaspoon red chili powder
– 1/2 teaspoon turmeric powder
– 1 teaspoon coriander powder
– 1 teaspoon sugar
– Salt to taste
– Fresh cilantro leaves, chopped (for garnish)
Instructions:
1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
2. Add the chopped onion and sauté until it becomes translucent.
3. Add the minced garlic, ginger paste, and green chili. Cook for another minute, stirring frequently.
4. Add the red chili powder, turmeric powder, and coriander powder. Mix well to coat the onions and spices evenly.
5. Add the diced pumpkin to the pan and stir to combine with the spices. Cook for a few minutes until the pumpkin starts to soften.
6. Reduce the heat to low, cover the pan, and let the pumpkin cook for about 15-20 minutes, or until it becomes tender. Stir occasionally to prevent sticking.
7. Once the pumpkin is cooked, add the sugar and salt to taste. Mix well until the sugar dissolves.
8. Cook for another 2-3 minutes to allow the flavors to meld together.
9. Remove from heat and transfer the pumpkin to a serving dish.
10. Garnish with freshly chopped cilantro leaves.
11. Serve hot with roti (Indian/Pakistani bread) or steamed rice.
