Mandarin Orange Pineapple Cake

For the Cake:

3 sticks of unsalted butter (softened)
3 cups of sugar
5 large eggs
2 teaspoons of pineapple or orange extract
1 tablespoon of vanilla extract
3 cups of cake flour
1 teaspoon of salt
1 teaspoon of baking powder
1 can (20 oz) of crushed pineapple (drained)
For the Glaze:

4 oz of cream cheese (softened)
2 tablespoons of reserved pineapple juice
1/2 cup of powdered sugar
1 tablespoon of vanilla extract
2 tablespoons of crushed pineapple
2 teaspoons of pineapple or orange extract

Preheat your oven to 350°F and grease a 10-inch bundt pan.
Using a stand mixer, beat 3 sticks of unsalted butter until soft and creamy. Add in 3 cups of sugar, and beat the mixture for about 10 minutes until it is light and fluffy.
Add in 2 teaspoons of orange extract, 1 tablespoon of vanilla extract, and 5 large eggs, one at a time, beating after each addition until well incorporated.
In a separate bowl, sift together 3 cups of cake flour, 1 teaspoon of salt, and 1 teaspoon of baking powder. Add the dry mixture into the butter mixture, alternating with 1/3 cup of evaporated milk. Mix until just combined, and be careful not to overmix.
Drain a can of crushed pineapple, reserving 2 tablespoons of the juice for the glaze. Add the drained pineapple into the cake batter and fold it in until just combined.
Pour the cake batter into the greased bundt pan and smooth out the top. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
While the cake is baking, prepare the cream cheese glaze. In a mixing bowl, beat 4 oz of softened cream cheese until smooth. Add in 2 tablespoons of reserved pineapple juice and 1/2 cup of powdered sugar. Mix until smooth and creamy.
Once the cake is done, let it cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely. Drizzle the cream cheese glaze over the cooled cake.
