6 mini pot pies
Ingredients
For the Filling
2 cups cooked chicken, shredded or diced
2 tbsp butter
1 small yellow onion, finely diced
2 cloves garlic, minced
1 cup carrots, diced
1 cup frozen peas
½ cup celery, diced
3 tbsp all-purpose flour
1½ cups chicken broth
½ cup whole milk or half-and-half
½ tsp dried thyme
½ tsp dried parsley
¼ tsp garlic powder
½ tsp salt, or to taste
¼ tsp black pepper
½ cup shredded cheddar cheese, optional
For the Crust
1 package refrigerated pie crusts, about 2 crusts
1 egg
1 tbsp water
Instructions
- Prepare the Chicken Filling
Preheat oven to 400°F (200°C).
Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery. Cook for 5–6 minutes, until the vegetables begin to soften.
Add the garlic and cook for another 30 seconds.
- Make the Creamy Sauce
Sprinkle the flour over the vegetables and stir well. Cook for about 1 minute to remove the raw flour taste.
Slowly pour in the chicken broth while stirring constantly. Add the milk and continue stirring until the mixture becomes creamy and slightly thickened, about 3–5 minutes.
Stir in thyme, parsley, garlic powder, salt, and black pepper.
- Add Chicken & Peas
Stir in the cooked chicken and frozen peas. If using, add the shredded cheddar cheese.
Cook for another 2–3 minutes, just until everything is heated through.
Remove from heat and let the filling cool slightly.
- Prepare the Mini Crusts
Lightly grease six oven-safe ramekins or a large muffin tin.
Cut the pie crust into circles large enough to fit into the bottom and sides of each ramekin. Press the dough gently into place.
Divide the chicken filling evenly among the crusts.
- Add the Top Crust
Cut additional circles from the remaining pie dough and place them over each pot pie.
Pinch or crimp the edges to seal. Cut 1–2 small slits in the center of each crust to allow steam to escape.
- Egg Wash
Whisk together the egg and 1 tablespoon water.
Brush the tops of the pot pies with the egg wash for a beautiful golden finish.
- Bake
Place the mini pot pies on a baking sheet.
Bake for 25–30 minutes, or until the crust is puffed and golden brown and the filling is bubbling.
Let them cool for 5–10 minutes before serving.

Turkey: Substitute cooked turkey for chicken.
Extra vegetables: Add corn, mushrooms, green beans, or diced potatoes.
Cheesy: Add mozzarella, cheddar, or Parmesan.
Herb flavor: Add fresh rosemary or sage.
Lighter version: Use 2% milk instead of heavy cream or half-and-half.
Crispier crust: Place the pot pies on a preheated baking sheet before baking.
Make ahead: Prepare the filling up to 2 days ahead and refrigerate until ready to assemble.
Storage & Reheating
Refrigerator: Store covered in the refrigerator for up to 3–4 days.
Freezer: Freeze fully assembled, unbaked pot pies for up to 2–3 months. Wrap tightly and freeze.

Q&A
Q: Can I use rotisserie chicken?
A: Absolutely! Rotisserie chicken makes these pot pies quick and flavorful.
Q: Can I use puff pastry instead of pie crust?
A: Yes. Puff pastry gives the pot pies a lighter, flakier, beautifully crisp topping.
Q: Can I make these without cheese?
A: Yes. The cheese is completely optional.
Q: Can I make mini chicken pot pies ahead of time?
A: Yes. Assemble them several hours ahead and refrigerate until ready to bake.
Q: Can I freeze mini chicken pot pies?
A: Yes. Freeze them unbaked and tightly wrapped for up to 2–3 months.
Q: Can I use leftover chicken?
A: Definitely. This is an excellent recipe for leftover roasted or baked chicken.
Q: Why is my filling watery?
A: The sauce may not have thickened enough. Simmer it for a few extra minutes before adding the chicken and vegetables.
Q: Why did my crust become soggy?
A: Make sure the filling isn’t extremely hot or watery when assembling. Baking on a preheated baking sheet can also help crisp the bottom.
Q: Can I make these gluten-free?
A: Yes. Use a gluten-free flour blend for thickening and certified gluten-free pie crust.
Q: Are these pot pies nut-free?
A: The recipe itself contains no nuts, but packaged pie crusts, broth, and other processed ingredients should be checked for allergen and cross-contact statements.
Q: Can I make them in a muffin tin?
A: Yes, but use a deep muffin tin and avoid overfilling. Individual ramekins generally give you more room for filling.
Serving Suggestion
Serve these warm with a simple green salad, roasted vegetables, or steamed green beans for a complete comfort-food dinner.
