Mini Pineapple Upside Down Cakes –
- 1 box yellow cake mix
- Substitute pineapple juice for water.
- 1 egg
- 11 rings of canned pineapple
- 11 maraschino cherries
- 11 tablespoons light butter or margarine (1 per ramekin)
- 22 tablespoons brown sugar (2 tablespoons per ramekin)
- Prepare the cake mix as per the directions on the box, replacing water with pineapple juice. Add one egg to the mix.
- Grease your ramekins with cooking spray.
- Place 1 tablespoon of melted light butter at the bottom of each ramekin, then add 2 tablespoons of brown sugar.
- Put a pineapple slice on top of the butter and sugar mixture, and place a maraschino cherry in the center of the pineapple.
- Pour the cake batter into each ramekin, filling it to the top.
- Bake in your air fryer at 350°F for approximately 16 minutes or until a toothpick inserted into the cake comes out clean.
