1 lb ground beef
1 lb mushrooms
5 cloves garlic, thinly sliced
5 slices Swiss cheese
1 cup crumbled goat cheese
1/3 cup thinly sliced scallions
1 tsp salt
Preheat oven to 375.
Set aside and 8×8 baking dish.
Add beef and salt to a high-sided pan over high heat. Crumble beef, cook until browned and releasing liquid. Add mushrooms and garlic. Cook until mushrooms are shrunken and most of the liquid is evaporated, about 6-8 minutes.
Drain beef mix in a colander, transfer to your baking dish. Stir in goat cheese and 2/3 of the Swiss, mix well with beef and mushrooms.
Evenly Sprinkle scallions on top then the remaining Swiss.
Bake uncovered at 375 for about 15 min.
