Easy Keto Reuben Casserole
1 lb corned beef
8oz sauerkraut
12 oz Swiss cheese
1/2 cup diced dill pickles
Butter or cooking spray
1/2 cup 1000 Island dressing
Preheat oven to 400.
Drain liquid from sauerkraut.
Grease your Casserole dish. I used a 9×11 dish.
Layer half of your corned beef, top with half of your sauerkraut and half of your pickles. Top with half the dressing and half the cheese.
Repeat.
Cover with foil and bake 10-15 minutes or until cheese is bubbling. Broil for 2-3 minutes and serve.
