Ingredients
For the Chicken
1½ lb boneless, skinless chicken thighs or chicken breasts
2 tbsp extra-virgin olive oil

¼ tsp black pepper
½ tsp dried thyme
For the Vegetables
1 small red onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
4 cloves garlic, minced
½ cup Kalamata olives, pitted
½ cup low-sodium chicken broth
1 tbsp tomato paste
1 tsp dried oregano
½ tsp red pepper flakes, optional

½ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
1 lemon, cut into wedges

Instructions

  1. Season the Chicken

Pat the chicken dry with paper towels.

In a small bowl, combine oregano, paprika, garlic powder, onion powder, salt, black pepper, and thyme.

Rub the seasoning mixture evenly over both sides of the chicken.
