Easy Keto Chicken Cordon Bleu

This is a deliciously hearty keto meal that you will LOVE! Layers of shredded chicken, ham, topped with pork panko, then Swiss cheese smothered in a creamy Dijon sauce, EASY keto chicken CORDON BLEU is amazingly yummy.. Low-carb dinner that the entire family will love!

It is a classic dish from France that has been served for years and years. Meaning “blue ribbon” in French.

Ingredients

  • 3½ cups shredded chicken 1.75 lbs
  • (chopped) ⅓ lb of deli smoked black ham
  • 5 ounces shredded Swiss cheese
  • ¼ cup Parmesan cheese

Cheese Sauce:

  • 1¼ cup heavy whipping cream
  • 3 oz cream cheese
  • 1 cup chicken broth
  • 1 tbsp dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp lemon juice
  • ½ tsp paprika
  • ¼ tsp salt
  • 4 tbsp butter
  • ¼ tsp pepper
  • ¼ cup cheddar cheese

Topping

  • 1 cup pork panko crushed pork rinds
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 350°F.
  2. Grease a casserole dish(9 X 13).
  3. In the bottom of the casserole dish, lay shredded chicken.
  4. On top, add the chopped ham.
  5. Melt butter in a saucepan, add spices, chicken broth, heavy whipping cream, dijon mustard and softened cream cheese. Add the Parmesan cheese, cheddar, and Swiss once the ingredients are combined.
  6. Bring to a very slow boil, then lower heat and for Five mins simmer uncovered so that the sauce can thicken and reduce. Make sure to lower the heat after it starts boiling to simmer because you can cause the cheese sauce to curdle.
  7. Over the chicken/ham mixture, pour the sauce.
  8. In a bowl, add the butter and crushed pork rinds and combine. On top of the casserole, sprinkle the pork rinds mixture.
  9. Bake for Twenty Five mins.
  10. Move to top shelf, last Five mins of baking.
  11. Serve hot!

Notes

  • Based on dividing the casserole, this recipe’s nutritional information is per serving into 9 even servings.
  • For this recipe, you can use cubed or shredded chicken. Just make sure it is fully cooked!
    Layer it to freeze this casserole, as stated above but don’t bake it. Instead, with plastic wrap/foil, wrap it well and let chill in the fridge before freezing. Then before baking, defrost in the fridge overnight.

Low carb Meatball casserole

Ingredients

  • Meatball Ingredients:
  • * 1 lb ground beef I used 85/15 blend
  • * 1 lb spicy pork sausage
  • * 1 cup shredded mozzarella
  • * 1/3 cup grated or shredded parmesan
  • * 1/2 cup crushed pork rinds substitute for breading
  • * 2 egg
  • * 2 tsp onion powder
  • * 2 tsp fresh minced garlic
  • * 1/2 teaspoon Italian Seasoning blend
  • Casserole Toppings:
  • * Low Carb Red Sauce Spaghetti or Marinara
  • * 2 Cups Cheese for the top of the casserole
  • * Fresh basil for a topping

Instructions

  • Preheat oven to 400. Spray a casserole dish with cooking spray
  • Use a food processor to crush the pork rinds.
  • Combine all the ingredients (except for the red sauce 2 cups cheese and fresh basil that is set aside for the casserole) for the meatballs.  I use my hands to mix all these ingredients.
  • Use a small cookie scoop and make small meatballs (all the same size)
  • Place the meatballs in a casserole dish and bake them for 15 to 20 minutes or until the meatballs are fully cooked.
  • Remove them from the oven and drain the grease.
  • Top with the low carb red sauce and cheese and put them back in the oven.
  • Bake for an additional 5 to 10 minutes until the cheese has fully melted.
  • Serve with a side salad or over zoodles and enjoy!

  • 6 mozzarella cheese sticks part skim low moisture mozzarella
  • 1 1/2 cups keto bread crumbs
  • 1/2 cup parmesan cheese
  • 1 tablespoon dried Italian herbs optional
  • 1 large egg
  • tablespoon water

Instructions

    • Cut each mozzarella cheese stick in half and set aside. In a high speed blender or food processor, add your pork rinds, parmesan cheese, and Italian herbs, and blend until a powdery texture remains.
    • Transfer the crumb mixture into a bowl. In a separate bowl, whisk together the egg and water, until combined.
    • Moving quickly, dip each cheese stick in the egg mixture, followed by the dry mixture, and repeat once more. Place the coated mozzarella cheese sticks and place them on a lined plate. Place them in the freezer for two hours.
  • Add 2-3 tablespoons of oil into a non-stick pan and place over medium heat. Once hot, remove the cheese sticks from the freezer and place them in the sizzling oil. Cook for 2-3 minutes, before flipping and cooking for a further 3 minutes, or until golden brown.
  • Place the mozzarella sticks onto a plate covered with a paper towel, and serve immediately.

Notes

Oven instructions– Preheat the oven to 240C/500F. Place the mozzarella sticks onto a lined baking sheet and lightly spray the exterior with cooking spray. Bake for 8-10 minutes, flipping halfway through.

Air fryer instructions– Place the mozzarella sticks into an air fryer basket and cook at 200C/400F for 10 minutes, flipping halfway through.

TO STORE: Cooked mozzarella sticks should be stored in the refrigerator, covered. They will keep well for up to 3 days.

TO FREEZE: Place leftover cooked mozzarella sticks in a ziplock bag and store them in the freezer for up to 2 months.

REHEATING: Either reheat the mozzarella sticks in a preheated oven (180C/350F) for 10 minutes, or in the air fryer (200C.400F) for 6 minutes.
