Quick Healthy Stir Fry Chicken and Veggies

A fast, colorful, and healthy dinner packed with juicy chicken and crisp vegetables in a flavorful homemade stir-fry sauce.

 Ingredients

For the Chicken

  • 2 boneless skinless chicken breasts, thinly sliced
  • 1 tbsp olive oil or sesame oil
  • Salt & black pepper to taste
  • 1 tsp garlic powder
  • ½ tsp paprika

Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 1 zucchini, sliced
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated

Stir Fry Sauce

  • ¼ cup low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar or lemon juice
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • ¼ cup water
  • Optional: red chili flakes for heat

Optional Garnish

  • Sesame seeds
  • Green onions, sliced

 Instructions

1. Make the Sauce

In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, water, and chili flakes if using.

2. Cook the Chicken

Heat oil in a large skillet or wok over medium-high heat.

Season chicken with salt, pepper, garlic powder, and paprika.

Cook for 5–6 minutes until golden and fully cooked. Remove and set aside.

3. Stir Fry the Veggies

In the same pan, add garlic and ginger and sauté for 30 seconds.

Add broccoli, carrots, peppers, and zucchini. Stir fry for 5–7 minutes until slightly tender but still crisp.

4. Combine Everything

Return chicken to the pan.

Pour in the sauce and toss everything together until the sauce thickens and coats the chicken and veggies, about 2 minutes.

5. Serve

Garnish with sesame seeds and green onions.

Serve hot on its own or over rice, noodles, or cauliflower rice.
