A beautiful, colorful roasted vegetable bake made with sweet potatoes, beets, carrots, and other root vegetables, finished with creamy feta, crunchy walnuts, fresh herbs, and a simple garlic-herb olive oil. It’s an easy Mediterranean-inspired side dish that looks impressive enough for a holiday table but is simple enough for a weeknight dinner.

Servings: 6
Prep Time: 20 minutes
Cook Time: 45–55 minutes
Total Time: About 1 hour 10 minutes

Ingredients
For the Roasted Vegetables
2 medium sweet potatoes, peeled and sliced into ¼-inch rounds
2 medium red beets, peeled and sliced into ¼-inch rounds
2 large carrots, peeled and sliced into ¼-inch rounds
2 medium yellow or Yukon Gold potatoes, sliced into ¼-inch rounds
1 small butternut squash, peeled, seeded, and thinly sliced
1 small red onion, sliced into thin wedges
3 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
½ teaspoon smoked paprika
½ teaspoon black pepper
¾ teaspoon salt
1 tablespoon fresh lemon juice
For the Topping
¾ cup crumbled feta cheese
½ cup walnuts, roughly chopped
1 tablespoon fresh thyme leaves
1–2 tablespoons fresh parsley, chopped
1 teaspoon sesame seeds, optional
1 tablespoon honey, optional
1 tablespoon extra-virgin olive oil
Optional Lemon-Herb Drizzle
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
½ teaspoon dried oregano
1 small garlic clove, finely grated
Pinch of salt
Pinch of black pepper
Instructions

  1. Preheat the Oven

Preheat your oven to 400°F (200°C).

Lightly grease a large baking dish with olive oil.

For the best presentation, use a rectangular or oval baking dish where the vegetables can be arranged in overlapping rows.

  1. Prepare the Vegetables

Wash and peel the vegetables.

Slice the sweet potatoes, beets, carrots, potatoes, and squash into thin, approximately ¼-inch slices.

Try to keep the slices similar in thickness so they roast at approximately the same rate.

  1. Make the Seasoning

In a small bowl, whisk together:

Olive oil
Minced garlic
Thyme
Oregano
Smoked paprika
Black pepper
Salt
Lemon juice

Set aside.

  1. Season the Vegetables

Place the sliced vegetables and onion in a large bowl.

Pour the seasoned olive oil over them and gently toss until everything is coated.

Tip: If you want the finished dish to look especially colorful, keep the beet slices separate while tossing them with the seasoning. This prevents the beet juice from coloring all the other vegetables.

  1. Arrange the Vegetables

Arrange the vegetable slices upright or slightly overlapping in rows inside the baking dish.

Alternate the colors:

beet → sweet potato → carrot → potato → squash

Continue until the dish is filled.

Tuck the onion wedges between the vegetable slices.

Drizzle any remaining seasoned oil from the bowl over the top.

  1. Cover and Roast

Cover the baking dish tightly with aluminum foil.

Bake for 25–30 minutes.

The steam created underneath the foil helps soften the vegetables.

  1. Uncover and Continue Baking

Remove the foil and continue baking for another 20–25 minutes, or until the vegetables are tender and the edges are golden and lightly caramelized.

If necessary, increase the oven temperature to 425°F (220°C) for the final 5–10 minutes to encourage more browning.

  1. Add Feta & Walnuts

Remove the dish from the oven.

Scatter the crumbled feta and chopped walnuts over the roasted vegetables.

Return to the oven for 3–5 minutes, just until the feta is warmed and the walnuts are lightly toasted.

Don’t leave the walnuts in too long because they can burn quickly.

  1. Finish the Dish

Sprinkle with fresh thyme and parsley.

For a sweet-savory finish, drizzle a small amount of honey over the top.

You can also add the optional lemon-herb dressing just before serving.

Serve warm.

Optional Lemon-Herb Drizzle

Whisk together the olive oil, lemon juice, honey, oregano, garlic, salt, and pepper.

Drizzle lightly over the roasted vegetables immediately before serving.

The bright lemon flavor balances the sweetness of the root vegetables and the salty feta beautifully.

Tips for Perfect Roasted Vegetables
Slice everything evenly so the vegetables cook at the same rate.
Don’t make the slices too thick or the centers may remain firm.
For crispier edges, don’t overcrowd the baking dish.
Covering the vegetables first helps them become tender; uncovering them allows them to caramelize.
Add the walnuts near the end so they don’t burn.
Add feta after roasting for a creamy, salty contrast.
If using very large beets, slice them slightly thinner than the other vegetables.

Recipe Q&A
Q: Can I prepare this ahead of time?

A: Yes. Slice the vegetables and prepare the seasoning several hours ahead. Refrigerate until ready to assemble and roast.

Q: Can I use different vegetables?

A: Absolutely. Parsnips, turnips, rutabaga, delicata squash, pumpkin, or golden beets work very well.

Q: Do I have to use beets?

A: No. Beets give the dish its beautiful deep-red color, but you can replace them with extra sweet potato, carrots, or squash.

Q: Can I use goat cheese instead of feta?

A: Yes. Goat cheese is an excellent substitute and gives the dish a creamy, tangy flavor.

Q: Can I use pecans instead of walnuts?

A: Yes. Pecans pair particularly well with sweet potatoes and roasted squash. Remember that pecans are also tree nuts.

Q: How do I make this nut-free?

A: Omit the walnuts and use pumpkin seeds or sunflower seeds for crunch.

Q: Can I make this without honey?

A: Yes. The root vegetables already have natural sweetness. Simply omit the honey.

Q: Can I make it vegan?

A: Yes. Use dairy-free feta and replace honey with maple syrup or simply omit it.

Q: Why are my vegetables taking so long to cook?

A: The slices may be too thick or the vegetables may be crowded. Slice them thinner and evenly, and make sure the oven is fully preheated.

Q: Can I use baby carrots?

A: Yes. Slice them lengthwise or into thin rounds so they cook at approximately the same rate as the other vegetables.

Q: Can I add protein to make it a complete meal?

A: Yes. Add chickpeas, lentils, grilled chicken, salmon, or cooked quinoa when serving.

Q: How long do leftovers last?

A: Store them in an airtight container in the refrigerator for up to 4 days.

Q: What’s the best way to reheat leftovers?

A: Reheat in a 400°F (200°C) oven or air fryer until hot. This helps restore the roasted edges better than microwaving.

Q: Can I freeze this?

A: You can, although the texture of some vegetables may become softer after freezing. For the best texture, enjoy it fresh or refrigerated.

Q: Can I make this for Thanksgiving or Christmas?

A: Definitely. The colorful vegetables, feta, walnuts, and fresh herbs make it especially attractive for a holiday table.
