Ingredients:
2 peppers halved and cleaned
1 lb ground sausage, cooked
1 8 oz. block of cream cheese
1 can of ROTEL
1/2 cup shredded parmesan cheese
1/2 cup shredded cheddar cheese
*Preheat oven to 350°
On low heat Add cream cheese to fully cooked sausage
Melt cream cheese fully and add rotel
Remove mixture from skillet into a bowl
Add cheeses and salt and pepper
Load each pepper half with mixture
Top with cheddar and Italian parsley
I put a thin layer of water in bottom of pan to soften
Bake for 20 minutes or till golden bubbly
I served with side salad
