Sausage & Veggie Soup
Ingredients
2 tbsp butter
1/2 onion chopped
2 TB minced garlic
32oz chicken/beff broth
8 oz cream cheese
1/4 cup Heavy whipping cream
1 lb Italian sausage (mild or hot & drain grease)
1/2 package bacon diced
1 14 oz can diced tomatoes
1 zucchini chopped
1/2 head chopped cauliflower
2 cups chopped/frozen spinach
1 tsp dried basil
1 tsp dried oregano
1 tsp onion powder
1/4 tsp cayenne pepper (to taste)
Sprinkle of parmesan cheese
Instructions
Melt the butter over medium-high heat and add the onion, garlic, zucchini, cauliflower. In a separate pan cook Italian sausage & bacon until meat is browned (drain grease).
Pour in the broth then add the basil, oregano, cayenne pepper (if using), and diced tomatoes.
Bring to a boil then lower the heat to simmer.
Place the cream cheese in micro to soften. Pour into the rest of the soup with Heavy whipping cream and stir.
Mix in the chopped spinach and allow to simmer for another half hour or more for the flavors to combine. Or place it all in the crockpot.
Serve topped with shredded parmesan cheese.
