simple low-carb chimichurri steak bites recipe:

Ingredients:
– 1 pound (450 grams) of steak, cut into bite-sized pieces
– Salt and pepper, to taste
– 2 tablespoons olive oil

For the chimichurri sauce:
– 1 cup fresh parsley leaves, packed
– 1/4 cup fresh cilantro leaves, packed
– 2 garlic cloves, minced
– 2 tablespoons red wine vinegar
– 1/4 cup olive oil
– 1/4 teaspoon red pepper flakes (optional)
– Salt and pepper, to taste

Instructions:

1. Season the steak bites with salt and pepper on all sides.

2. Heat the olive oil in a skillet over medium-high heat.

3. Add the steak bites to the skillet and cook for 2-3 minutes per side, or until they reach your desired level of doneness. Remove the cooked steak from the skillet and set aside.

4. To make the chimichurri sauce, combine the parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes (if using), salt, and pepper in a food processor or blender. Pulse until well combined, but still slightly chunky.

5. Pour the chimichurri sauce over the cooked steak bites and toss to coat them evenly.

6. Let the steak bites marinate in the chimichurri sauce for at least 10 minutes to allow the flavors to meld together.

7. Serve the low-carb chimichurri steak bites as an appetizer or as a main course. You can also garnish with additional fresh herbs if desired.

Enjoy your delicious and flavorful low-carb chimichurri steak bites!
