2 cups cooked and shredded chicken breast
1/4 cup diced celery
1/4 cup diced red onion
1/4 cup diced dill pickles
1/4 cup mayonnaise
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
1 teaspoon dried dill
Salt and pepper to taste
4 cups chopped romaine lettuce
In a large bowl, combine the shredded chicken, celery, red onion, and dill pickles.
In a small bowl, whisk together the mayonnaise, dijon mustard, apple cider vinegar, dried dill, salt, and pepper until well combined.
Pour the dressing over the chicken mixture and stir until everything is evenly coated.
To serve, place a cup of chopped romaine lettuce on a plate or in a bowl and top with a generous scoop of the chicken salad mixture.
