7-8 tomatoes (scoop out the inside of the tomatoes).
Brush the tomatoes with olive oil and balsamic vinegar.
Put some shredded cheese in the bottom of each tomato ( I used Colby Jack).
Cook 1 lb of ground sausage (I seasoned the sausage with pepper, garlic, and basil , and oregano) and then stuff the cooked and drained sausage into the tomatoes.
Top the tomatoes with some cheese (I used mozzarella and some smoked white cheddar)
Cook at 350 degrees until the cheese is melted. Then broil it for about 4 mins.
Garnish with parsley.
The net carbs will depend on the size of tomatoes and how much of the insides you scoop out. I figure mine are about 3.5 net carbs each with the cheese and balsamic vinegar.
