Ingredients

2 lbs radishes, cleaned, ends removed and cut in half
1 tbsp lard
1 tbsp Kerrygold unsalted butter
Pink salt and pepper
Garlic and onion powder
Once radishes are cleaned and cut, place them in a large microwave safe bowl. Add about 1 inch of water and microwave on high power for 5 minutes. This helps make them more tender and easier for frying. Heat up large frying pan over medium to medium high heat. Add butter and lard. Once melted and hot, add in radishes and season with salt, pepper and garlic and onion powder. Cook stirring often for 20-25 minutes until they are caramelized and tender. Once you remove them from pan, sprinkle with a little extra salt.
You can dip them in sugar free ketchup like I did or make a loaded radish bowl with fresh grated cheese, sour cream and bacon like my husband made. He doesn’t care much for raw radishes, but cooked, he lived them because they are so close to potatoes!!
They are the absolute best keto potato replacement!
