A creamy, flavorful homemade cheese packed with crunchy nuts and sweet dried fruits. It’s perfect for cheese boards, crackers, toast, sandwiches, or as an elegant appetizer for holidays and gatherings.

Ingredients
For the Cheese
8 oz (225 g) cream cheese, softened
4 oz (115 g) goat cheese, softened
½ cup shredded sharp cheddar cheese
2 tbsp honey or maple syrup
½ tsp vanilla extract
Pinch of salt
Nuts & Dry Fruits
¼ cup chopped walnuts
¼ cup chopped pecans
2 tbsp sliced almonds
2 tbsp pistachios, roughly chopped
¼ cup dried cranberries
2 tbsp chopped dried apricots
2 tbsp golden raisins
Optional Flavor Additions
1 tsp orange zest
½ tsp cinnamon
1 tbsp fresh rosemary, finely chopped
1 tbsp honey for drizzling
Instructions

  1. Prepare the Nuts

Place the walnuts, pecans, almonds, and pistachios in a dry skillet over medium-low heat.

Toast for 3–5 minutes, stirring frequently, until fragrant. Do not let them burn.

Remove from the heat and allow them to cool completely.

  1. Prepare the Cheese Mixture

Place the softened cream cheese and goat cheese in a mixing bowl.

Beat until smooth and creamy.

Add the shredded cheddar, honey, vanilla, and a pinch of salt. Mix until well combined.

  1. Add the Dried Fruits

Fold in the dried cranberries, chopped apricots, and raisins.

Add about half of the cooled toasted nuts and gently mix.

  1. Shape the Cheese

Place a large sheet of plastic wrap or parchment paper on your work surface.

Spoon the cheese mixture onto the center and shape it into a log.

Wrap tightly and refrigerate for at least 2 hours, or until firm.

For a firmer cheese, refrigerate overnight.

  1. Coat the Cheese Log

Spread the remaining toasted nuts over a plate or cutting board.

Unwrap the chilled cheese log and gently roll it through the nuts, pressing lightly so they stick to the outside.

  1. Finish & Serve

Place the cheese on a serving board.

Drizzle with a little honey and sprinkle with orange zest or fresh rosemary if desired.

Let it sit at room temperature for about 10–15 minutes before serving for the best texture.

Serve with crackers, toasted baguette slices, apple wedges, pear slices, or grapes.

Tips for the Best Results
Soften the cheeses before mixing for a smoother texture.
Toasting the nuts brings out much more flavor.
Allow the nuts to cool before adding them to the cheese.
Chop the dried fruits into small pieces so they distribute evenly.
Don’t add too much honey—the dried fruits already provide sweetness.
Chill the cheese thoroughly before coating it.
For a savory version, reduce or omit the honey and vanilla and add more herbs.
Easy Variations

Cranberry Walnut Cheese:
Use extra dried cranberries and walnuts with a little orange zest.

Q&A
Q: Can I use only one type of nut?

Yes. Walnuts, pecans, pistachios, or almonds can each be used alone.

Q: Can I make this without nuts?

Yes. Replace the nuts with toasted pumpkin seeds or sunflower seeds if you want a nut-free variation. For severe allergies, check all ingredient labels for cross-contact.

Q: Can I use different dried fruits?

Absolutely. Try dried cherries, figs, dates, blueberries, mango, or chopped prunes.

Q: Can I use only cream cheese?

Yes. Use 12 oz (340 g) cream cheese if you don’t want to use goat cheese. The flavor will be milder and the texture very creamy.

Q: How long does it last?

Store it covered in the refrigerator and use within 3–4 days for best quality.

Q: Can I make it the day before?

Yes. In fact, making it the day before allows the flavors to develop and makes the cheese easier to slice.

Q: Can I freeze it?

Freezing is not recommended because the dairy texture can become grainy or watery after thawing.

Q: Is this cheese sweet or savory?

This version is mildly sweet, thanks to honey and dried fruits, with a creamy, slightly tangy flavor from the goat cheese.

Q: What nuts pair best with dried cranberries?

Walnuts and pecans are especially good with cranberries, while pistachios add a nice color and texture.

Q: Can I make individual cheese balls instead of a log?

Yes. Shape the mixture into small balls and roll each one in the chopped nuts. Chill before serving.

Q: What is the best way to serve it?

Let the cheese soften slightly at room temperature, then serve with crackers, toasted bread, fresh fruit, and a drizzle of honey.
