Crispy roasted cauliflower and golden chickpeas tossed with garlic, warm spices, fresh lemon, and herbs. This easy one-pan dish is hearty, flavorful, and perfect as a healthy side dish or satisfying vegetarian meal.

Ingredients
For the Roasted Cauliflower & Chickpeas
1 large head cauliflower, cut into bite-sized florets
1 can (15 oz / 425 g) chickpeas, drained, rinsed, and thoroughly dried
3 tbsp olive oil
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
½ tsp ground coriander
½ tsp turmeric
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes, optional
For Finishing
1 tbsp fresh lemon juice
1 tsp lemon zest
2 tbsp fresh parsley, chopped
2 tbsp fresh cilantro, chopped, optional
2 tbsp crumbled feta cheese, optional
1 tbsp toasted pumpkin seeds, optional
Optional Lemon Yogurt Sauce
½ cup plain Greek yogurt
1 tbsp fresh lemon juice
1 small garlic clove, finely grated
1 tbsp chopped parsley
Pinch of salt
1–2 tbsp water, as needed
Instructions

  1. Prepare the Oven

Preheat your oven to 425°F (220°C).

Line a large baking sheet with parchment paper if desired.

  1. Prepare the Chickpeas

Drain and rinse the chickpeas well.

Pat them very dry with paper towels. Removing excess moisture helps them become crisp during roasting.

  1. Season the Vegetables

Place the cauliflower florets and dried chickpeas in a large bowl.

Add olive oil, minced garlic, smoked paprika, cumin, coriander, turmeric, salt, black pepper, and red pepper flakes.

Toss thoroughly until everything is evenly coated.

  1. Roast

Spread the cauliflower and chickpeas in a single layer on the baking sheet.

Roast for 25–35 minutes, tossing once halfway through cooking.

Continue roasting until the cauliflower is browned around the edges and the chickpeas are golden and crispy.

  1. Make the Yogurt Sauce

While everything is roasting, combine Greek yogurt, lemon juice, garlic, parsley, and salt.

Add 1–2 tablespoons of water and whisk until the sauce reaches a smooth drizzling consistency.

  1. Finish the Dish

Remove the roasted cauliflower and chickpeas from the oven.

Immediately drizzle with fresh lemon juice and sprinkle with lemon zest and fresh parsley.

Add crumbled feta and pumpkin seeds if using.

  1. Serve

Serve warm with the lemon yogurt sauce drizzled over the top or on the side.

Tips for Extra-Crispy Chickpeas
Dry the chickpeas very well before roasting.
Don’t overcrowd the baking sheet.
Use a large sheet pan so the ingredients have room to roast rather than steam.
Toss the cauliflower and chickpeas halfway through cooking.
For maximum crispiness, roast for a few extra minutes while watching carefully.

Q&A
Q: Can I use frozen cauliflower?

Yes. You can use frozen cauliflower, but roast it directly from frozen and avoid overcrowding the pan. It may not become quite as crisp as fresh cauliflower.

Q: How do I make the chickpeas extra crispy?

Dry them thoroughly before seasoning and spread them in a single layer. High oven heat and plenty of space help them crisp.

Q: Can I make this without feta?

Absolutely. The dish is delicious without cheese. You can add extra fresh herbs or a drizzle of tahini instead.

Q: Can I make this vegan?

Yes. Skip the feta and replace the Greek yogurt sauce with a tahini-lemon sauce or dairy-free yogurt.

Q: Can I prepare this ahead of time?

Yes. Roast the cauliflower and chickpeas ahead and refrigerate them in an airtight container. Reheat in the oven or air fryer to restore some crispness.

Q: How long does it keep?

Store leftovers in the refrigerator for up to 3–4 days.

Q: Can I use an air fryer?

Yes. Air fry at approximately 400°F (200°C) for 15–20 minutes, shaking the basket several times, until the cauliflower is browned and the chickpeas are crisp.

Q: What can I serve with it?

It pairs well with quinoa, rice, couscous, pita, hummus, grilled chicken, salmon, or a fresh Mediterranean salad.

Q: Can I add other vegetables?

Yes. Bell peppers, zucchini, red onion, cherry tomatoes, and broccoli are excellent additions. Add vegetables according to their cooking time so they don’t overcook.

Q: Is this good for meal prep?

Yes. Keep the roasted vegetables separate from the yogurt sauce and add the sauce and fresh herbs just before eating for the best texture.
