Ingredients:
– 2 boneless, skinless chicken breasts
– 1 tablespoon olive oil
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 small red onion, sliced

– 1 teaspoon cumin
– 1/2 teaspoon paprika
– 1/2 teaspoon garlic powder

– Juice of 1 lime
– 4 cups mixed salad greens
– 1 avocado, sliced
– 1/4 cup chopped fresh cilantro
– Optional toppings: shredded cheese, sour cream, salsa

Instructions:

1. Preheat your grill or stovetop grill pan over medium-high heat.

2. Season the chicken breasts with salt, pepper, and half of the chili powder, cumin, paprika, and garlic powder. Drizzle with olive oil and rub the spices into the chicken.

3. In a bowl, combine the sliced bell peppers and red onion. Toss with olive oil, lime juice, and the remaining half of the chili powder, cumin, paprika, and garlic powder. Season with salt and pepper.

4. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from the grill and let them rest for a few minutes. Then, slice the chicken into strips.

5. While the chicken is resting, grill the bell peppers and red onion for about 5-6 minutes until they are tender and slightly charred.

6. In a large salad bowl, arrange the mixed salad greens. Top with the grilled chicken, bell peppers, and red onion.

7. Add sliced avocado and sprinkle with chopped cilantro.

8. If desired, you can add additional toppings such as shredded cheese, sour cream, or salsa.

9. Serve the Keto Chicken Fajita Salad immediately and enjoy!
